しかし今のままで良いのであろうか？

久しぶりに搭乗する世直し主水である。
　金沢の未来を語るキーワードにフードピアが抜けているぞ。フードピア金沢を見てみるといかに金沢が食材に恵まれてきた街であるかがよくわかる。フードピアを語らずして金沢を語るなかれ。
金沢人は豊富な魚介類に加え最近では能登のフォアグラ、良質の肉牛に恵まれて本当に幸せである。回転すしに行って「ぶりトロ」や「子持ち甘エビ」を味わえる大都市といったら金沢ぐらいしかないだろう。
今回は出張で東京に行った報告をしよう。銀座のとある寿司屋の体験である。拙者は金沢と同じ感覚で寿司屋の店員に向かって
「にいちゃん、甘エビ握ってくれんけ？、子持ちの奴をな」と頼んだら
「？」という感じで
「子持ちの甘エビ？」
と聞き返してきやがった。
拙者は
「子持ち甘エビは知らんがけ？」と言うと
「そうです。」という返事。
「お客様はどちらから来られましたか？」と聞くので
「金沢だが」と言うと、店員の顔つきが一瞬変わった。「それじゃ粋の良い築地のマグロが入っていますので大トロでも握りましょうか？」と兆戦的に言ってきたのである。
そこですかさず拙者は「トロやったらブリトロにしてくれんけ？」と言い返した。
すると店員は「ブリトロって何ですか？」というので
「金沢ではブリトロは普通ですが、何か？」ということで、銀座の寿司職人に金沢の寿司ネタを紹介してやった。と言うことで銀座で夜はふけて行ったのである。
このように金沢には東京銀座に負けない食文化があるのだ。拙者はフードピアの街金沢をもっと強調することで金沢の街をもっと有名にすべきであると常々感じている。これには全国ネットの番組でフードピア金沢の特集番組を放送するとかしてほしいものである。多分大河ドラマより視聴率が良いはずである。

来年のフードピア金沢は2月7日から三日間開催される。

我らが大和百貨店が真の北陸の雄になるには全国区の百貨店になる必要があります。今の大和は北陸州都となる金沢を中心に、富山・新潟他中小都市が中心です。
これでは、伊勢丹や高島屋と張り合うことはできません。
そんな状態だから市民から「西武や伊勢丹が金沢に来てほしい。」とか「新潟の大和は古臭い。」と言われてしまうのです。
この状態を打開するには金沢市民の力で大和を日本を代表する高級デパートに育て上げることが必要です。
第一ステップ
香林坊大和の増床作戦。アトリオの吹き抜けを埋めて売り場へ転用、隣の農林中金を解体して増築。そうやって売場面積は50,000�uを確保する。
第二ステップ
金沢駅前に大和金沢駅店を出店する。
ここはJRからの利用客と加賀・砺波・能登からの自動車利用客をターゲットとして、約80,000�uの駅前の郊外型百貨店を目指す。
シネコンや大型観覧車を設置し、一日中楽しめる百貨店を目指す。
また、新潟の古町の店舗を全面的に建替。場合によっては新潟駅再開発に伴って、新潟駅前に移転し新潟を名実ともに代表する百貨店となる。
その場合は古町はラブロとしてリニューアル。
第三ステップ
地元の金沢の基盤を固めたところで、全国に展開開始です。まず手始めに大和銀座店をオープン。それから、心斎橋、渋谷に支店をオープンします。
銀座店・・・・・・売場面積40,000�u　場所は有楽町〜銀座三愛交差点のあたり
渋谷店・・・・・・渋谷の公園通りにラブロPART1、PART2、PART3を出店
心斎橋店・・・・・そごう跡地に出店
芦屋店・・・・・・阪急芦屋近辺にセレクトショップを開設。大和ブランドを上流階級に提供。

このように東京・大阪に出店すれば、大和の知名度は一気に上昇します。だれも金沢の地方百貨店と言う人はいなくなります。
西武や伊勢丹、高島屋が来てほしいなんて誰も言わなくなります。大和だけで充分です。私は金沢市民として大和と共に育ってきました。
だからこそこのような発展を遂げる事を大和百貨店に期待しています。

kimutakumansei様、貴殿の言葉は私への激励の言葉と受け取った。
これからも金沢の未来に向けて提言を続けていきたいので、私を熱く支援していただきたい。
ところで貴殿が貼り付けたホームページを色々拝見させていただいた。幸いにも金沢には他都市にない伝統と文化がある。他の都市と一緒にする必要はない。心配無用である。
　しかし、気になることがある。貴殿の紹介に「金沢自慢【2Ch】【Yahoo】【まちBBS】その２」と言う掲示板があったが、これは貴殿が開いたものかな？。ここを読むと、私の書いた内容がいっぱいコピーされているのには驚いた。これは重大な問題である。この掲示板は全国民が見る掲示板であると思うが、私のビジョンが他都市に盗まれたことを想像してほしい。金沢の未来都市構想を他都市が真似をしたり、未来都市構想の実現を邪魔する連中が出てきたらどうなるか？
　くれぐれも私のビジョンの取り扱いには注意してほしい。
話は変わるが、私のことを妄想呼ばわりする族が多いが、まことにお気の毒である。未来を信じなければ、金沢の明日はないことを肝に銘じるべきである。

最後に
　最近この掲示板が賑わしくなってきた。投稿者が多いことは喜ぶべきことであるが、単なる罵り合いを行う事は止めてもらいたい。ここは金沢の素晴らしき未来を語るトピである。ここに参加をするのであれば、金沢の未来を語るキーワードを示してから参加してほしい。

北國新聞創刊110年記念「ブランドフォーラム　in　北陸：地ブランドの時代」が10月28日、金沢市の北國新聞会館で開かれ、パネリスト五人が地域のブランド戦略について話し合ったのはご存知か？。
この中で浜野保樹先生が「お国自慢ができない人に地ブランドは語れぬ。まずは子供たちから地域の良さを教えるべし。」と説いたそうである。拙者はそれを聞いて涙があふれんばかりに感動した。
金沢人ならば金沢自慢を全国津々浦々で行うべし。それにはまず金沢市民は幼稚園から金沢学を徹底的に学んでもらいたいのじゃ。そこで金沢の歴史・伝統・自然・文化・工芸・民俗・自然・産業・学問・スポーツ・政治・経済・交通等ありとあらゆる金沢の事柄を学習し、その良さ・偉大さ・美しさ・素晴らしさを体得すべきである。
また金沢大学にはより専門的な金沢学を学ぶ最高学府として『金沢学部』を創設すべし。
そして金沢人が全国・世界の桧舞台で活躍する折には、金沢の自慢を堂々と行え！
拙者は東京・大阪・名古屋、さらには上海・パリ・バルセロナ・ローマ・ハワイ・・・・・と世界の至る所で金沢のすばらしさを披露してきたぞ。

この間サンダーバードに乗るために始発駅にいったんです。
指定席を取ろうとしましたが全部満席だったので自由席にのることにしました。
でもホームは自由席に乗る人達がずらっと順番をついているんです。
どう考えても座れそうになかったので、隣の指定席の入口に立ちました。
そして列車が到着して指定席の入口から自由席に移動しようとしたら、何と鍵がかかって自由席に行けなかったのです。
これには頭にきました。
私は思わず「行けんぞいや！」と叫んでしまいました。
どうしても座りたい客に対してなんと言う仕打ちをするのでしょうか！
私は自由席に座る為に色々考えた末の行動を取ったのです。
知恵をめぐらせて、指定席車両から自由席に移動するという行動を取ったのです。
しかし、まさか鍵がかかっているとは思いもしませんでした。
車掌はこのような卑怯な方法を取るべきではありません。
結局私はデッキに新聞紙を敷いて終着駅まで行く羽目になりました。
もう特急には乗りたくありません。

みなさんは金沢の凄さを知らないようですね。
金沢は文化の都と呼ばれています。
奥ゆかしさは京都以上でしょう。
特に食文化では京都を遥かに凌いでいます。
日本海の香箱カニ、ズワイガニ、アマエビの刺身、能登の岩ガキ、寒ブリの刺身
このような新鮮な魚介類は京都では味わえません。
また、金沢には川魚という名物もあります。
ごりの佃煮、泥鰌のかば焼き、天然あゆの塩焼き・・・・
野菜で言えば、金時草、金沢れんこん、金沢ずいき。
これらの料理を九谷焼や輪島漆、山中漆の器で頂くのです。
金沢の人々は料理を舌だけで味わう事はしません。眼と舌の両方で感性を研ぎ澄ませて味わうのです。
このように、これほど食文化に恵まれた大都市は日本では金沢ぐらいでしょう。
もうしばらくしたら、パリやローマの三ツ星の老舗レストランが金沢の加賀料理を学びに来る事でしょう。

皆の衆、ひさしぶりじゃ。世直し主水でござる。この間久しぶりに東京に出張してきた時のエピソードを紹介したい。
拙者は改札口を出て、駅前のとある回転鮨屋に入った。そこで拙者は鮨を握っている店員に
「穴子握ってくれんけ。」と頼んだ。
すると店員は「ハイよ！」と威勢の良い声でさっと出してくれた。なかなか良い感じの店だ、と思いつつ、
今度は「マグロ握ってくれんけ。」と頼んだのである。
するとこいつは「お客さん、廻ってます。」というのである。
そんなことは百も承知。私は握りたての鮨を食いたいのだ。
「わしは新しいのが食いたい。回転しているのは嫌じゃ。」と言ったら、
「お客さん、ここは回転鮨屋です。廻っているお皿の方からお召し上がりください。」と言い返してきたのである。
私はすかさず、「金沢やったら注文したらその場で握ってくれるが、東京では握ってくれんがか？」と言ってやった。すると店員はしぶしぶ握り始めた。
しかし、こんなサービスの悪い店ではこっちも食う気がしなくなった。
「もう結構だ。」
さっさと精算をすませて店をでてやった。
金沢の回転鮨屋ならそんな事はない。皿が回転していても、頼めば嫌な顔一つせず、店員がその場で握って出してくれるのが普通である。
やっぱり金沢の鮨屋はサービスが数段上である。日本を代表する観光都市ならそれが当たり前。
このような温かいサービス精神がある限り金沢の未来は明るい。
しかし、心配な処もある。「シンコ、煮蛤、ヅケ、蒸し鮑」など手の込んだネタを注文してもできないのである。
「鮨職人たるもの、その程度のものができなくてどうするのだ。」と言いたい。
アボガドやキャビアを鮨ネタに使うのも結構だが、これからの回転鮨屋は将来の為に、金沢の新鮮な素材を使ってしっかり基本のネタを勉強してもらいたい。

って言われて、３バイ２０００円で買ったら、そのうち１パイが、ゆですぎなのかもともと粗悪蟹なのか、足の身が殻にへばりつき状態でした。
それ以来、まだ泡をふいてる生きた状態のコウバコガニを買ってきて、でっかい鍋にヒタヒタの塩水はって、
落し蓋して１５分間自分家でゆでて、ゆでたてを食べるのが一番美味しいと気づきました。
消費者として自己防衛策が必要な時代なのですかね（苦笑）。
でも、近江町市場はいい味だしてると思います。
「たけぇがんねぇけ」とか「いきのいいがくたんし」「どれうまいげ？」「きゃぁ（今日は）なにゃお買い得なん？」など
金沢弁まるだしで魚屋のあんちゃんやらとうちゃんかぁちゃんにかけあえばいいがんねぇけ？といった感じです。（大笑）
その点、金石のいきいき魚市は、観光客が入っていない時間帯は、活気がないのでいまいちです。
コウバコ：ずわい蟹のメス、「香箱蟹」と書く、福井ではセイコガニと言う。

北陸新幹線の建設により、東金沢駅が移転したことは記憶に新しい。
これから東金沢は金沢の東の玄関口としてますます発展を遂げそうな勢いである。
しかし、操車場の存在がこれ以上の発展を塞いでいるのも事実である。
東金沢の操車場は思い切って閉鎖し、ビジネスパークとして飛躍を遂げるべきである。
範囲は新幹線と在来線に囲まれた部分を中心に、ムサシやルネスのエリアや旧東金沢駅前を含めた約75ha。
再開発構想としては、まず204号線の陸橋あたりにJR浅野本町（仮称）駅を新設する。
そして旧東金沢駅の跡地には北陸新幹線東金沢駅を新設し、新東金沢駅とブリッジで連結する。
ここを金沢の東の玄関口としてこのエリアを開発し、さらには地下鉄を開通させ旧都心へのアクセスをスムーズにする。
操車場跡地にはシオサイトや東京ミッドタウンや六本木ヒルズをしのぐビジネス街・住宅街が完成することになる。
世界の一流企業・ホテルに加え、アミューズメント施設としてさらに高度に変身したムサシやルネス、
そして超高層高級マンションや国連機関や国際大学を誘致し、日本海側最大のビジネスパークを出現させる。
またエリアの中心には兼六園の5倍はある緑地を確保し、緑溢れる快適な生活空間を作りたい。
このような大型プロジェクトにより金沢の人口増加・産業拡大を図るべきである。

今日は皆様に金沢のクリスマスを紹介させていただきます。
金沢のクリスマスと言えば、なんと言っても近江町市場に尽きます。
クリスマスになると金沢の主婦は近江町市場に集まり、新鮮な刺身を買っていきます。
金沢の主婦はクリスマスになると刺身を使って、色んなちらしを作ります。
マグロをぐるっと巻けば薔薇のできあがり、ふくらぎを巻けば白菊のできあがりです。
他には子持ち甘えび、鯛、イカ、タコなど好みに応じて巻きます。
最後に香箱の子や味噌を散らせば、クリスマスちらし寿司のできあがりです。
好みに応じてこのわたやからすみを散らしてみるのも良いでしょう。
ところでみさなんは金沢が仏教王国だって知ってましたか？
ですから金沢のクリスマスは「メリークリスマス」とは言いません。
「極楽浄土、極楽浄土」これが金沢のクリスマスです。
皆さんも一度来てみまっし。

大河ドラマの影響力は絶大

　初めて投稿する世直し主水である。いつも楽しく拝見させて頂いておる。
大河ドラマ「利家とまつ」は毎週見ている。利家公も金沢に入城し、これから金沢が舞台となるような感じだ。
また「笑っていいとも」にも利家公のご子孫が登場し、ついに金沢の時代が来た！、という思いがしている。
金沢復興を論じる際、金沢のネームバリューは無視できない。
ドラマのおかげで金沢がどこにあるのか知らない人なんていないはずだ。
また加賀百万石と前田利家公を知らなかった人もこのドラマのおかげでほとんどいなくなったようである。
ところで私も貴殿と似たような体験をした。
先日、名古屋に出張した時の体験談を披露しよう。仕事が終わった後、錦三丁目という処に取引先につれて行ってもらった。
そこは片町をちょっと大きくしたような飲み屋街。有名な建築家が設計したというビルの中のクラブに入った。
ちょっと私も金沢弁が入っていたせいだと思う。
ママ「○○様はどちらのご出身ですか？」
俺「金沢だが」
ママ「え〜、金沢ご出身なの？。今【利家とまつ】で金沢が有名になっているのよね。
私ね、1度金沢に行って見たいと思ってるの。今エキスポ百万石とかいうのやってんでしょ。ねえ、連れて行って〜。」と言う感じでモテまくりの1日であった。
私は、ママ曰くエキスポ百万石の見所、金沢城・兼六園の美しさ、加賀料理の醍醐味を手取り足取り丁寧に説明してあげた。
今回は貴殿のおっしゃる金沢のネームバリューの凄さを体感してきた事を報告する。
ところでエキスポ百万石というのは正確には加賀百万石博の事で有るが、名古屋ではPRの為広告付きの市営バスが走っていたそうだ。
その加賀百万石博は私も何度が言ったが，1番記念になるのは、利家とまつの衣装をまとって撮る記念撮影である。あれは是非体験した方がよい。
今回の出張で感じた事は金沢復興には現状打開と斬新な取組しかないということである。その起爆剤が大河ドラマ「利家とまつ」である。
マスメディアをうまく使い、金沢の知名度をさらに広め、金沢に人・物・金・情報が集まる様にし、さらに金沢から情報を発信しなければならない。
それをしないままであればいずれ金沢は日本海に沈んでしまうだろう。
今こそ観光・文化・学問・芸術の街金沢を再構築すべきである。
また日本海側の経済・政治・金融の中心地区としての発展も視野に入れなければいけないのだ。

世直し主水でござる。
金沢にスターバックスができてもう一年が過ぎた。出来た当時は行列ができていたが、最近はずいぶん落ち着いてきたようだ。拙者のような都会的な生活をしている者にとってはこのほうが利用しやすい。ソファに腰掛けキャラメルマッキャートやタゾティーを飲みながら、モバイルでメールを確認するにはスタバの雰囲気が心地よいのでござる。しかし、金沢人を見ているとスタバ如きで緊張している客がまだまだ多い。慣れるには申し越し時間が必要だと痛感する。
拙者はスターバックスについては、一般の金沢人より多くの店を利用しておる。東京は新橋・汐留シティ・大崎ゲートシティ・南池袋・新宿マイシティ・西新宿・日比谷シティ、大阪は本町・関空、名古屋は伏見・栄。つい最近では上海出張時に豫園（Yuyuan）という16世紀にできた有名な公園内のスターバックスの雰囲気を堪能してきた。
拙者の個人的希望であるが金沢市内には、もう少しスターバックスの支店が増えることを期待したい。現在は片町や武蔵が辻の一流繁華街が中心だが、今後は金沢駅構内・広坂・市役所内や県庁内にもできると良い。またタリーズも個人的に好きなCAFÉ（カフェと発音する）である。犀川河畔や浅野川河畔にできると中々良い雰囲気になるであろう。

しかしこれで問題がない訳ではない。自問自答をするならば、『金沢にシアトルズ系のコーヒーショップばかりできてよいのだろうか？』という疑問である。拙者はコーヒーも好きだが日本茶も好きである。特に加賀番茶は世界に自慢できる茶の香りがある。金沢にはコーヒーだけでなく日本茶の香りが漂ってほしいと感じている。（本来なら番茶フラペチーノが金沢オリジナルのメニューにあってもよいだが。）

話は変わるが金沢は自他共に認める日本一の和菓子文化の街。あの虎屋がパリ・ニューヨークに出店し六本木にTORAYA　CAFÉを出したのをご存知か？。
伝統の虎屋が、あんとチョコレートの融合、和菓子とコーヒーとの出会いという、「和」と「洋」の垣根を乗り越える新しい文化の創造にチャレンジしているのだ。
金沢の未来に必要なのはこのチャレンジ精神である。
落雁や五色生菓子、羊羹、きんつばという名だたる名菓を作っている老舗はシアトルズ系CAFÉやToraya　CAFÉにも負けないKanazawa’z系の【The　Wagashi　CAFÉ】を金沢や東京・京都・パリ・ロンドン・ローマ・ニューヨークにオープンさせる気概が必要でござる。金沢市内では兼六園下、武家屋敷街、寺町界隈、香林坊、片町、東山に【The　Wagashi　CAFÉ】をオープンさせる。金沢の和菓子文化の誇り高き伝統を受け継ぎ、21世紀の新しい和菓子文化を創造し世界に発信して欲しいのである。
街路樹の木漏れ日の下、店先の歩道のチェアに座って伝統和菓子とコーヒーを堪能したり、番茶ムースやきんつばのオレンジソースがけといった創作和菓子を紅茶と共に頂く。これぞ21世紀の金沢文化である。原宿表参道でも和菓子が頂けるオープンエアなカフェはあるまい。地元の金沢人だけでなく世界中からやってくる観光客にも受けることはまちがいない。
このように寿司文化だけでなく日本の和菓子文化も金沢が主導権を握って発展させてほしいと拙者は心から希望する。

　石川県では、福井・石川・富山で北陸州を考え、当然州都は金沢を考える。
富山は、石川・富山・上越・飛騨で北陸州を考え、当然州都は富山市となる。
　これでは何時まで経っても堂々巡り、野々市合併失敗の轍を踏むことになりかねない。
　そこで提案。
　北陸道と東海北陸道の交差点。すなわち、小矢部ジャンクション周辺に新州都を建設してはどうか。
　双方痛みわけといったところ。
交通の要衝であり、金沢・富山のほぼ中間であり、金沢富山間のメガロポリス化が期待できる。

皆の衆、ひさしぶりじゃ。世直し主水でござる。
最近は寿司屋や料亭、フレンチレストランに行っても味の基本が出来ていないと思うことばかりじゃ。
かの魯山人が渡仏先の仏蘭西料理店で鴨料理を料理店のソースではなくて持参したわさび醤油で味わったそうじゃがその気持ちがわからない訳ではない。
拙者は魯山人程の食通ではないが、味へのこだわりは誰にも負けないつもりでござる。
拙者が今こだわるのは醤油である。どこに行くにしても「マイ（My）醤油」を持ち歩いている。
味が気に入らなかった場合には、マイ醤油を取り出して味わうようにしているのでござる。
回転寿司に入った時であった。カウンターに座って寿司を味わう前に、まずお皿にかけた醤油を味見したところ、醤油の味が拙者に合わないのである。
傍らにいた店員（たぶんアルバイト）に聞いても、どこの銘柄の醤油かはっきりとした返事が返ってこない。
これでは寿司を楽しめないと思い、拙者は懐からマイ醤油を取り出して小皿の上に垂らし、これに寿司を付けて食べた事がある。
寿司の味が格別なものとなった。普通の回転寿司屋ではあったが、コハダ・鮪・イクラ・イカ・鯛・平目・赤貝・・・どれを食べても満足できたのである。
これを見ていた店員は目が点になっていたことは言うまでもない。
これからの回転寿司屋は、使用している醤油の銘柄を店頭に表示すべきであろう。
皆の衆もこだわりの味があるはずじゃ。普段からマイ醤油を持参する方も多いことであろう。
さて、その醤油の銘柄であるが、拙者のこだわりのマイ醤油はヤマト醤油の「ひしほ醤油」である。
一般に市販されている醤油と比べると、味のまろやかさ・香り・甘味は格別である。
なお保存する場合は開封したら必ず冷蔵庫で保存すべし。（この醤油は生醤油である。）
そんな醤油が仏蘭西の三ツ星料理店で採用されたという記事を読んだ。

仏蘭西の三ツ星料理店が醤油を使うのはこれが初めてではないが、醤油の潮流が変わるきっかけとなるに違いないぞ。
醤油といえば、今までは千葉県野田や和歌山県湯浅の醤油が有名であったが、これからの時代は金沢大野の醤油である。
三ツ星料理店採用をきっかけに仏蘭西料理での醤油は金沢大野産が定番になるに違いない。
仏蘭西の三ツ星料理店の料理長が認めた大野の醤油。これをきっかけに仏蘭西の料理職人が加賀料理の修業の為に金沢にやって来る日もそう遠くないだろう。
