皆の衆、ひさしぶりじゃ。世直し主水でござる。
最近は寿司屋や料亭、フレンチレストランに行っても味の基本が出来ていないと思うことばかりじゃ。
かの魯山人が渡仏先の仏蘭西料理店で鴨料理を料理店のソースではなくて持参したわさび醤油で味わったそうじゃがその気持ちがわからない訳ではない。
拙者は魯山人程の食通ではないが、味へのこだわりは誰にも負けないつもりでござる。
拙者が今こだわるのは醤油である。どこに行くにしても「マイ（My）醤油」を持ち歩いている。
味が気に入らなかった場合には、マイ醤油を取り出して味わうようにしているのでござる。
回転寿司に入った時であった。カウンターに座って寿司を味わう前に、まずお皿にかけた醤油を味見したところ、醤油の味が拙者に合わないのである。
傍らにいた店員（たぶんアルバイト）に聞いても、どこの銘柄の醤油かはっきりとした返事が返ってこない。
これでは寿司を楽しめないと思い、拙者は懐からマイ醤油を取り出して小皿の上に垂らし、これに寿司を付けて食べた事がある。
寿司の味が格別なものとなった。普通の回転寿司屋ではあったが、コハダ・鮪・イクラ・イカ・鯛・平目・赤貝・・・どれを食べても満足できたのである。
これを見ていた店員は目が点になっていたことは言うまでもない。
これからの回転寿司屋は、使用している醤油の銘柄を店頭に表示すべきであろう。
皆の衆もこだわりの味があるはずじゃ。普段からマイ醤油を持参する方も多いことであろう。
さて、その醤油の銘柄であるが、拙者のこだわりのマイ醤油はヤマト醤油の「ひしほ醤油」である。
一般に市販されている醤油と比べると、味のまろやかさ・香り・甘味は格別である。
なお保存する場合は開封したら必ず冷蔵庫で保存すべし。（この醤油は生醤油である。）
そんな醤油が仏蘭西の三ツ星料理店で採用されたという記事を読んだ。

仏蘭西の三ツ星料理店が醤油を使うのはこれが初めてではないが、醤油の潮流が変わるきっかけとなるに違いないぞ。
醤油といえば、今までは千葉県野田や和歌山県湯浅の醤油が有名であったが、これからの時代は金沢大野の醤油である。
三ツ星料理店採用をきっかけに仏蘭西料理での醤油は金沢大野産が定番になるに違いない。
仏蘭西の三ツ星料理店の料理長が認めた大野の醤油。これをきっかけに仏蘭西の料理職人が加賀料理の修業の為に金沢にやって来る日もそう遠くないだろう。
